Requeixo and spicy prawns on tostón


Receta de requeixo y gambón picante sobre tostón elaborada para el concurso de Recetas con Requeixo As Neves

  • 50g of Requeixo from As Neves
  • 1 green banana or plantain
  • 1 leek
  • 2 fresh or thawed prawns
  • 50 ml of extra virgin olive oil to marinate the prawns
  • 2-3 chillies
  • 200 ml of light oil for frying (depending on the size of the pan or saucepan)
  • 20 g of salt


  1. In a bowl we put the prawns to marinate in olive oil with 2 chillies (we remove the seeds from the chillies and open them) for at least two hours.
  2. We chop the green part of the leek in julienne.
  3. Peel the banana and cut it into 1cm or 1.5cm slices.
  4. In a bowl we whisk the As Neves requeixo with salt.
  5. We start by frying the banana, for which we need a pan or saucepan with mild oil over medium heat. When the oil reaches the correct temperature, add the banana slices and fry them for 3-4 minutes until they take on a light golden color. We remove them and place them on absorbent paper.
  6. We mash each fried slice until thin. Subimos la temperatura del aceite y cuando esté bien caliente, volvemos a freír las rodajas unos 3 minutos hasta que estén doradas y crujientes. We reserve on absorbent paper.
  7. In that same very hot oil, fry the leek in julienne for a few seconds, remove and reserve on an absorbent paper.
  8. Heat a frying pan or griddle over high heat, pass the prawns for a minute on each side and add the salt. We withdraw.
  9. We place with the tostón as a base, on top the requeixo beaten with salt, the prawns and decorate with the fried leek.
