Piquillos with tuna and tuna fish


Introduction:

Recipe of piquillo peppers with requeixo and tuna prepared for the Recetas con Requeixo As Neves contest.

Ingredients:

  • 6 Piquillo peppers
  • Requeixo Cheese
  • Canned tuna
  • Pesto sauce: 20 basil leaves, 100Gr. Pine nuts, Parmesan cheese to taste, 150 ML. AOVE

Elaboration:

Step by step:

  • Drain the liquid from the canned peppers and set aside.
  • In a bowl, mix the requixo and the drained tuna.
  • Add pepper to taste and mix everything together.
  • Stuff the peppers generously with a teaspoon.
  • For the pesto sauce, we grind all the ingredients to the desired texture.

Serve on a plate:

  • Put a bed of pesto on the tray or presentation plate.
  • On top of the peppers
  • Finish with a little more pesto on top of the peppers.

Suggestions:

  • This mixture of requeixo and bonito is also perfect for stuffing rama tomatoes.
  • And another tasty idea: Toast a slice of bread, spread it generously on toast and finish with some anchovies on top.
